Ingredients

  • 2lbs Top Sirloin Steak, sliced thin
  • 5 ½tbsp Organic Tamari
  • ¼cup Lemon Juice
  • 6cloves Garlic
  • 1tsp Black Pepper
  • 1 Bay Leaf
  • 2 Red Onion (medium)
  • 1tbsp Avocado Oil

Instructions

    Slice steak against the grain (about 1/4 inch thick slices)

    In a large bowl or ziplock, combine: - Tamari - Lemon Juice - Garlic - Black Pepper - Bay Leaf

    Add sliced beef to marinade, toss to coat, cover / seal, and marinate for 30 min minimum

    Slice onions into rings (about 1/2 inch thick)

    Heat large pan or Dutch oven over medium heat

    Spray oil

    Add ALL the onion rings (they'll cook down!)

    Sprinkle with a pinch of salt

    Cook 12-15 min, stirring occasionally, until: - Soft and translucent - Sweet smelling

    Remove onions to bowl, set aside

    Remove beef from marinade (SAVE THE MARINADE)

    Pat beef slices dry with paper towel (this helps them sear, not steam)

    Heat same pan over medium-high heat

    Spray with oil

    Work in batches: - Lay beef slices in single layer - Sear 1-2 min per side until browned - Remove to plate - Repeat with remaining beef

    Once all beef is seared and removed, reduce heat to medium

    Pour saved marinade into pan

    Scrape up browned bits from bottom

    Bring to simmer, cook 3-4 min to reduce slightly

    Taste and adjust (may want to double the marinade ingredients if you want more sauce)

    Return beef slices to pan

    Add caramelized onions back

    Toss everything together in the sauce

    Cook 2-3 min until beef is coated and everything is hot
